Simple Protein Pancakes, mildly spiced pancakes made using a simple blender, rich in protein and easy to make!
Being an Indian, breakfast was always a elaborate meal at our households, our moms put in a great effort by planning, soaking lentils , grinding batters and mixing flours to prepare a lavish and ofcourse nutritious meals for the start of the day.While the old days are good, time has brought in many changes in our lifestyles that started showing negative impact on our bodies and thus weight. There are days where I would either skip my breakfast or eat fried breakfast in a hurry at work place. While the first thing disturbs our metabolism(the rate at which we burn calories) the latter one add up fats layer to body which put the overall health at risk. Now if you tell me reasons for not having a healthy breakfast I would give you a healthy and quick recipe everytime you tell so..Now let’s talk about everything pancakes.
Pancakes are a very quick option for breakfast to consume them at home or to carry for work and travel. Now am no talking about those pancakes that are made with refined and bleached white flour, the pancakes that are made with eggs and protein powder in my version. Ok, coming to your question, protein powder is not a must to lose weight but I have this habit of occasional intake of protein shakes when I do intense strength training workouts. I have got loads of it so am kind of went wild today to make pancakes out of it. While I prefer to have protein from natural sources as much as possible I don’t completely rule out whey protein which has all the amino acids in it.(amino acids are the measure for protein in simpler terms) So no arguments there and am happy make use of this protein powder in different forms including sweet treats and these little pancakes. And protein is such an important nutrient that all our weight loss aspirants need ! I used egg whites and strawberry flavoured protein powder for making these protein pancakes but you could use any ingredient that’s rich in protein, I just wanted to finish off this flavour and buy a new one:P Those who don’t use protein powder can use the below substitutes, but no need to be worried on the measurements, just keep mixing in the beaten egg whites until you get batter consistency, we are not competing in a bake off competition 🙂 Ofcourse mind those portions!
Subs for protein powder:
- Rolled oats
- Almond butter
- Peanut butter
- Flax seeds
- Whole eggs
- 40 grams whey protein powder
- 3 egg whites
- A pinch of salt
- ½ teaspoon cinnamon powder
- 1 teaspoon vanilla essence
- 1 tablespoon of olive oil
- Take egg whites and vanilla extract into a blender jar. Blend well
- Add in the protein powder, spice powder and little salt. Blend again to form a semi-runny batter
- Heat a non-stick pan and brush some oil. Pour one ladle full of batter on to the pan and spread like a pan cake, Allow it to get cooked little and drizzle some oil.
- Cook it well and flip to other side and cook until golden brown.
- Serve with little maple syrup
Decorate it with fresh or frozen berries to have a wholesome breakfast.
